Yeasted Mother Pastry Buns

Soft, yeasted pastry buns filled with cheese and finished with sesame or nigella seeds.

Ingredients

  • 600 g flour
  • 200 ml milk
  • 200 ml water
  • 200 ml oil
  • 2 eggs
  • 1 tablespoon instant yeast (10 g)
  • 3 tablespoons sugar (30 g)
  • 1 tablespoon salt (10 g)
  • Cheese, for filling
  • Sesame or nigella seeds, for topping

Jasmine’s tips

  • Bring the ingredients to room temperature.
  • Warm the milk and water; they should not be hot.
  • Reserve the egg yolk or yolks intended for brushing the buns, following Jasmine’s original method.
  • Lightly flour the work surface and your hands if the dough becomes sticky.

Method

  1. Stir together the warm milk, warm water, oil, sugar, salt, and the egg portion intended for the dough. Gradually add the flour, then add the instant yeast. Mix until a dough forms.
  2. Turn out the dough and knead until smooth. If it remains very sticky, add a little more flour.
  3. Cover the dough with a cloth or plastic wrap so it does not dry out. Let it rise at room temperature for 1 hour.
  4. Take an egg-sized piece of dough and press it into a small, flat round. Lightly oil your hands if needed.
  5. Place cheese in the center, fold the dough over, and gently pinch the edges closed.
  6. Arrange the buns on an oiled or parchment-lined baking tray, leaving space between them. Brush with the reserved egg yolk and sprinkle with sesame or nigella seeds.
  7. Let the shaped buns rest for another hour in the turned-off oven. Remove the tray, then preheat the oven to 180°C or 360°F, as recorded in Jasmine’s original recipe.
  8. Bake for 25–30 minutes, until golden brown. Baking time may vary by oven.
