Ingredients
- 350 g flour
- 125 g butter
- 1 egg
- 100 g yogurt
- 100 ml oil
- 1/4 tablespoon salt
- 1 tablespoon sugar
- 1 tablespoon apple or grape vinegar
- 2 tablespoons wheat or corn starch
- 10 g baking powder
- Cheese, for filling
- Sesame or nigella seeds, for topping
Jasmine’s tips
- Bring the ingredients to room temperature.
- Separate the egg yolk and reserve it for brushing the buns.
- Add the flour gradually so you can control the dough’s consistency.
- The dough should remain soft and pliable, similar to the softness of an earlobe.
Method
- Stir together all of the ingredients except the flour, reserving the egg yolk for brushing.
- Add the flour gradually and knead until a soft dough forms.
- Take a walnut-sized or slightly larger piece of dough and press it into a small, flat round.
- Place cheese in the center, fold the dough over, and gently pinch the edges closed.
- Arrange the buns on a baking tray, leaving space between them. Brush with the reserved egg yolk and sprinkle with sesame or nigella seeds.
- Preheat the oven to 180°C or 360°F, as recorded in Jasmine’s original recipe. Bake for 25–30 minutes, until golden brown. Baking time may vary by oven.
